VIETNAMESE BEEF, RICE NOODLE AND PEANUT SALAD

With the warmer weather just around the corner this tasty beef salad is just the trick to feed the family and stay healthy.


Serves 4

Ingredients

  • 2tsp sesame oil -PANTRY

  • 1 Tb ginger, julienne -0.20c

  • 500gm beef mince- $3.00

  • 1tsp 5 spice powder -0.10c

  • Sea salt and white pepper -PANTRY

  • 200g dried rice vermicelli noodles -$1.00

  • 1 medium carrot, julienne -0.20c

  • 1 medium zucchini, julienne -0.80c

  • ½ iceberg lettuce, sliced-0.50c

  • 1 long red chilli- 0.30c

  • ½ bunch coriander-0.90c

  • ½ bunch mint- 0.90c

  • 80g peanuts, crushed-$1.00

Dressing

  • 1Tb sugar-PANTRY

  • 1Tb vinegar-PANTRY

  • 1Tb fish sauce -0.10c

  • 2tsp sesame oil-0.15c

  • 1tsp chilli oil-0.10c

  • 1 lemon, juiced-0.60c

TOTAL $9.85

Method

Heat the oil in a non-stick fry pan over a medium heat. Add the ginger, beef , 5 spice powder and season with salt and pepper.

Cook for 8-10 minutes, or until the beef is cooked through and fragrant. Remove fro the heat and set aside.

Meanwhile place the noodles in a heat proof bowl, cover with boiling water and leave to soak for 5 minutes. Cut the noodles a few times with scissors, drain and place into serving bowls.

Top the noodles with the carrot, zucchini, lettuce, chilli, coriander and mint. Mix all the dressing ingredients together in a bowl.

Top the noodles and salad with the warm beef mince. Drizzle over the dressing and sprinkle with peanuts. Enjoy.
