Citrus Marinated Salmon with a Vegetable Salad

Dietitian Zoe Bingley-Pullin joined MORNINGS to cook up a beautiful Citrus Marinated Salmon with a Vegetable Salad.

RECIPE: Citrus Marinated Salmon with a Vegetable Salad

Prep time: 20 minutes, Cook time: 5-8 minutes, Serves: 4

Ingredients for Salad:

  • 1 cup grated carrots

  • ½ cup chopped capsicum

  • 1 cup of cos lettuce, washed and shredded

  • ¼ cup parsley, finely chopped

  • ¼ cup coriander, finely chopped

  • 1 Spanish onion, roughly chopped

  • 1 tsp of lemon juice

  • 1 tsp of lime juice

  • 1 tbsp orange juice

  • 2 garlic cloves

  • 1 tbsp tamari soy sauce

  • 2 tbsp olive oil

  • 1 tsp fresh ginger

  • 1 tsp of fresh chilli, deseeded

Marinate for the Salmon:

  • 1 tbsp lemon juice

  • 1 tsp lemon zest

  • 1 tbsp of lime juice

  • 1 tsp lime zest

  • 1 tbsp orange juice

  • 1 tsp orange zest

  • 4x 150-200 gram salmon

Method:

Mix the carrots, cos lettuce, capsicum, parsley, coriander and Spanish onion in a bowl.

Whisk together the lemon, orange and lime juice, tamari, ginger, garlic and chilli. Pour of the vegetable mixture.

Place all the citrus ingredients in a bowl including the salmon and let it marinate for 10 minutes. Lightly pan-fry the salmon until slightly pink in the middle.

Serve the salmon on a bed of the vegetable mixture and drizzle with olive oil.

  • Lemon zester

  • Grater
