Cook Courtney Roulston joined us in the MORNINGS kitchen to cook up a beautiful noodle dish for the family that is under $10.

RECIPE: Chilli and Basil Pork Noodles

Serves 4

  • 100gm dried vermicelli noodles- 0.70c

  • 2tsp sesame oil -0.20c

  • 1 small brown onion- 0.30

  • 1 clove garlic- 0.20

  • 1Tb fresh ginger- 0.30

  • 400g pork mince- $4.00

  • ½ tsp Chinese 5 spice powder- 0.10

  • 2 long red chillies- 0.50

  • 300g green/snake beans $2.40

  • ¼ bunch basil 0.60c

  • 1Tb Soy Sauce- 0.30c

  • 1Tb sugar- Pantry

  • 1Tb oyster sauce- 0.30c

Total Cost: $9.90

Method

Place the noodles in a bowl, cover with boiling water and leave to soak for 5 minutes. Drain and set aside.

Heat a non-stick fry pan over a medium/high heat. Add half the oil, onion, garlic and ginger.

Cook for 2 minutes, then add the pork, 5spice powder and stir-fry for 4-5 minutes, or until the pork has browned.

Heat the remaining oil in a separate pan over a high heat. Cook the beans for 2-3 minutes then add into the pork along with the noodles, basil leaves, soy, sugar and oyster sauce. Stir-fry for a further 2 minutes to warm through the noodles.
