Rich chicken noodle soup

Prep time: 15 minutes
Cooking time: 30 minutes

This soup is a meal in itself. Serve with hot buttered toast for a really comforting winter meal.

Ingredients:
1 tablespoon olive oil
1kg chicken thigh fillets, trimmed and sliced
2 brown onions, finely diced
2 cloves garlic, finely chopped
2 medium carrots, diced
3 celery stalks, halved lengthwise then sliced
¼ cup plain flour
2 litres chicken stock
salt and pepper to taste
1 cup risoni pasta
Chopped parsley to serve

Method:
Heat oil in a large heavy-based saucepan over medium- high heat. Add chicken and cook, stirring, for 2 minutes. Stir in onion, garlic, carrot and celery and cook a further 2-3 minutes or until vegetables begin to soften. Add flour and stir to coat the contents of the pot.

Slowly add stock, ½ cup at a time, until all flour is incorporated and there are no lumps. Stir in remaining stock and bring to the boil; reduce heat to medium and simmer for 15 minutes. Taste and adjust seasoning. Add risoni and cook for another 10 minutes or until pasta is tender. Ladle soup into large soup bowls and top with chopped parsley.

I really loved this show, is it going to make a return or is that the end of it? I hope it will come back, it was a great show.
When doing the twice baked soufflet, is it necessary to use smoked salmon, can I use tinned. Also can a normal ramekin (1 cup) be used for the baking. Thanks

I too have had trouble printing and even tried copy and paste into word with no luck either BUT if you use firefox or google chrome instead of internet explorer no more problems. Seems it's a browser problem!

It's about time we got a show with good home cooking on it, not all that fancy stuff. Have made a few of your dishes and have loved all of them. Going to do the crumbed chicken this week and i'm sure it will be just as good. Keep up the the good work and I hope your show is a great success.
Having problems as well printing these recipes, would love a solution.
Tried your soup and it was delicious. The second batch I left out the pasta, drained a lot of the liquid added mushroom and made a chicken pie! Wonderful - even delicious the next day eaten cold. Now I have a batch in the freezer waiting to impress visitors!! Thanks Julie
Hi Julie Made your Chicken Soup without the Risoni Pasta in it and My Husband made it up as I was not very well and I was not going to have any dinner so your Soup Recipe came in Handy as I had a Big Bowl of it and Enjoyed it very much as it was Delicius.I Copied all your Recipe's and I am looking forward to trying them when I am better.I think your show is wonderful and it is about time there is a cooking show on T.V. with Home-cooked Food that any one can afford to do.From Gail
