Oven fried chicken

Serves 4
Prep time: 10 minutes
Cooking time: 30 minutes

This recipe is healthier than deep fried chicken but is still crunchy and delicious.

Ingredients:
2 cups fresh breadcrumbs
½ teaspoon paprika
¼ teaspoon garlic powder
¼ teaspoon white pepper
2 teaspoons salt
1 size 16 chicken, jointed or 1.6kg chicken pieces
50g butter, melted

Method:
Preheat oven 200°C / 180°C fan forced. Line a large baking tray with non-stick paper.

Combine all ingredients except chicken and butter in a large bowl. Brush chicken evenly with melted butter and dip into the crumb mixture. Press crumbs down firmly onto the chicken and arrange on prepared baking tray.

Bake for 20 minutes, then turn chicken over and bake a further 10-15 minutes or until cooked through and the crumbs are golden brown.

Cook’s notes:
Buy 1.6kg of chicken pieces instead of jointing your own chicken.

Larger, thicker pieces may need a little more cooking.

Try these alternatives: add grated parmesan or sesame seeds to the crumb or play around with the spices by adding chilli powder or chopped rosemary.

Love your recipes Julie I tried this recipe recently,didn't have powdered garlic so substituted lemon pepper and grated the rind of one lemon and mixed into crumbs I also reduced the amount of salt in recipe Is 2 teaspoons correct? Recipe turned out very well I am sure we will enjoy this often.
I cooked this the other night for my family. After two bites they all remarked how delicious this dish is .It will now be a regular on our menu. The family is happy and I am happy because you can control the amount of fat and its so easy. Thank you Julie for sharing such a great receipe.!!

Big thanks to Julie for sharing the oven fried chicken recipe - it's simply delicious! I used chicken breast and seasoned the crumbs with cayenne pepper, BBQ seasoning and grated parmesan...so tasty. The chook turned out golden and crispy - this will definitely be a regular on our menu.
I will make it and save our money and i think it better do cooking then order at KFC which is lots of fatty.. I am really glad the cooking chicken in over than Deep Fry.. I say Appluase lots for your awesome cooking and will be watching every satty if will copy it when i go outing.. keep going cooking show..
Julie love the show it just keeps getting better. I love the chicken but by bread crumbs were not as brown or golden as yours ?
Made this recipe last week and a big hit (my 19 year old son even commented that "the food just keeps getting better in this house!"). Didn't have garlic pepper or white pepper on hand so used black pepper and cajun spice instead. Still very tasty. Our visitors from Phillip Island even took home the recipe with them!
We cooked this tonight with some fresh bread crumbs from our homemade bread. It was easy to prepare and cook and fabulous to eat. Will definitely be doing this again. Thank you for a wonderful recipe.
