, Prev Next Serves 4
Preparation time: 10 minutes
Cooking time: about 15 minutes

1 x 500g packet dried fettucine
500g bacon rashers, rind removed and cut into thin strips
200g button mushrooms, finely sliced
2 cloves garlic, crushed
2 tablespoons Dijon mustard
¼ teaspoon ground white pepper
300ml thickened cream

Bring a large saucepan of salted water to the boil and cook fettucine according to packet instruction. Drain pasta, reserving ½ cup of cooking water; Set aside.

Meanwhile heat a large non-stick frying pan over medium heat and add bacon. Cook, stirring, for 3-4 minutes or until bacon is starting to brown. Stir in mushrooms and garlic and continue cooking for a further few minutes or until softened and fragrant.

Stir in hot pasta water, mustard, white pepper and cream and simmer for 3-4 minutes or until the sauce thickens. Taste and adjust seasoning.

Add hot drained pasta and toss coat evenly. Serve immediately with steamed broccoli.
