Eamon Sullivan is an Olympic champion, underwear model and now cook. Eamon credits his fitness and good looks to eating well, He joined Kerri-Anne to cook one of his favourite meals - Prawn and Buckwheat Noodle Salad.

Prawn and Buckwheat Noodle Salad

This Asian-inspired prawn salad is more of a meal than a side salad. Soba noodles are made from buckwheat, a gluten-free grain that contains no wheat, so this is also a good-for-you option.

Ingredients

  • 180g soba noodles

  • Sesame oil, for drizzling

  • 200 g cooked prawns, peeled

  • 150 g snow peas, blanched,

  • Refreshed and sliced in half

  • 1 avocado, sliced into 8 wedges

  • 1 handful baby spinach

  • 1 Lebanese cucumber,

  • Peeled into ribbons

  • ¼ cup (30 g) roughly chopped toasted macadamias

Dressing

  • 3 tablespoons lime juice

  • 3 tablespoons light soy sauce

  • 2 teaspoons caster sugar

  • 1 small red chilli, seeded and finely chopped

Place the noodles in a large saucepan of boiling water.

Cook for 2-3 minutes or until al dente. Drain and rinse with cold water, then transfer to a large bowl and drizzle with sesame oil.

Add the prawns, snow peas, avocado, spinach, cucumber and chopped macadamias. Set aside.

To make the dressing, place the ingredients in a small bowl and stir to combine.

To serve, pour the dressing over the noodles and gently toss to coat.
